Vogue called Hermé "the Picasso of pastry." His Ispahan flavour — rose, lychee, raspberry — has its own cult following and is still rotated through the seasonal menu.

Pierre Hermé treats pastry the way perfumers treat scent — the Ispahan (rose, raspberry, lychee) is the signature and worth the trip. The Bonaparte shop in Saint-Germain is the spiritual flagship, ten minutes from Saint-Sulpice and twenty from the Musée d'Orsay. Tiny shop, no seats — grab a box and find a bench.
